Summary

Hi Everyone,

Bonefish Grill gets a * Five Star * rating from this group!  The service and food was beyond
words.  We marveled at our plates because they looked like works of art.  I had already met Jim
(Partner) when I swung by there after our last month’s luncheon.  He not only remembered me
today but also noticed I wasn’t wearing my glasses.  Does this give you an idea of how this
restaurant is run?  I’m an auditor, by profession; so, Jim’s attention to detail does not go
unnoticed.  It also added to my sense of comfort.  Jim assured me his entire team is familiar with
the gluten-free diet. I still provided him a folder of information on celiac so he can give his team
a quiz J   Jim gave us two long tables with four servers.  We definitely received the royal
treatment and he even “thanked us” for coming and for our business.  You and I know both know it
is we "celiacs” who need to be thankful.  

I want to welcome our newest members Jillian and Kate!  I also want to apologize again for
making Kate’s husband Jillian’s.  I am always rushing the weekend of these luncheons but this is
inexcusable!  However, Joe was very good-natured and even wore the nametag.  Kate and Joe come
to Charlotte via Sydney, Australia.  You can just image the adjustment Kate has to make coming
from a land down under that is really above the USA (in the gluten arena) J  I tried to reassure
Kate that Charlotte is growing leaps and bounds.  I have seen such a huge difference in just the
three years since I’ve been diagnosed.  I have gone from having to order everything online to now
having a variety of stores to choose from that carry gluten-free items.  Now, I can even go to my
local Harris Teeter!  Jillian comes to us via Southern California and has been diagnosed for about
5 years.  So, Jillian had some good tips to share with the group.  Also, Jillian is starting a career
in the filming industry.  Why Charlotte?  One guess…if you like fast driving then you’re right –
NASCAR… someone has to film all those cute drivers.

We had 19 people at this month’s luncheon, which is one of our largest turnouts.  Ted joined us
too, even though he is still recuperating from his surgery.  Betty (and her husband Clarence) also
joined us even though she has had more than her share of health challenges.  We all enjoyed our
meals immensely and some even broke down and had the crème brulee.  I passed on dessert since I’
m really really trying to be good especially after reading in Dr. Green’s book that we celiacs are
more prone to gain weight.  We all had a great time with lots of conversation and information to
share!  The index cards with pens, I always lay out to capture all the tips, were highly used this
day.  We couldn’t write fast enough or keep up with all the great ideas.  Here are just a few of
the tips we shared at my corner of the table:  
  • Try the Apple Crumb Pie (at Earth Fare in the Bakery section) – warm it and top with ice
    cream.
  • The best crackers are the Asian Rice Crackers – they come in different flavors and are
    available at your local Harris Teeter.  The cheese flavored ones are just like the old
    cheze-its (sort of) so you can eat them as is – as a snack. The other flavors are great to
    eat as is or to top with tuna fish salad, cheese or other gf workable item. Also, try the
    “Nut Thins”, by Blue Diamond (the nut expert J ). These are available at the Earth Fare.
  • Montana Chocolate Chip Cookies (by Kinnikinnick Foods, Inc.) – Jillian says they taste just
    like the gluten Chips Ahoy!
  • “Foods by George” (www.foodsbygeorge.com) - Jan says they have the very ‘BEST”
    individual pizza crust rounds (3 for $6.75).  Freeze and then just thaw and top with your
    favorite toppings.  George also has great English Muffins and Pecan Tarts!  
  • Breads from Anna (www.glutenevolution.com) - I always buy the original with the red and
    orange packaging.
  • “Cause Your Special” – Jillian says they are the best biscuits (mix).  Carol makes too and
    says to use the butter Crisco.  They swear they taste just like the traditional gluten
    biscuits.  A few of us are also going to try deep-frying these biscuits for some long
    missed donuts!  I just did a search and it looks like you can order them at www.
    glutenfreemall.com or www.glutenfreegroumet.com.
  • Never use a wooden cutting board that has been used to cut gluten bread.  Wood is porous
    and retains the gluten.
  • L-Glutamine is the most prevalent amino acid in your body and the only food your intestine
    consumes.   Thus, this supplement promotes healing of the gut.
  • Corn Curls – by Shiloh Farms and can be found at “The Natural Market” (Arboretum).  They
    also are a great snack with your wine!
  • In a thunderstorm never use a phone that is wire connected, you could get electrocuted!  
    Always use a portable wireless phone in a storm.  For your’s truly who expressed
    frustration at getting disconnected during the recent storm J

Rebecca Says…
Well, the garlic mashed potatoes were certainly a delight with the melting butter dripping off the
sidesJ (Rebecca, we loved them too on our end of the table - jk).  Albert Ellis once said “the best
years of your life are the years that you learn all your problems are your own responsibility.  Not
the President, not the ecology, not your mother but your own.” A good quote for us to all think
about.  We had a good time today and you better come next time for an even better time!

So…we can’t blame our parents for celiac or our spouses, family, friends, co-workers, restaurants,
etc. who don’t understand it or even sometimes make mistakes.

Closing Notes…
Thank you to all those who came and made today’s dinner a memorable event!  Those that couldn’t
come, we hope you can make an upcoming event.  Knowledge and healing come from sharing
information and also the burden.

Here’s the scoop for the rest of the year!  Note: I put all of this information out on our web-
site.  We will go to P.F. Chang next month, then Carrabba’s in Oct. and we’ll end the year in Nov.
at the Red Bowl.  Then, we’ll start the New Year at a new restaurant (literally for the
restaurant and for us), “Table”.  Table opened not too long ago and is affiliated with Blue (Chef
Gene is Betty’s son-in-law). Betty said it’s not too far from the Earth Fare.  It has a gluten-free
menu and the chef trained under Chef Gene.
