O.k.. yes, this may be a little unusual but I seized the opportunity to provide lots of educational
information to a captive audience.  Other mainstream diseases may not need to explain their condition
or talk about what's happening.  However, celiac disease is still hugely under-diagnosed and not a
simple thing to grasp.  So the pictures below will give you a glimpse of the information I had available.

We need your help!  Celiac Disease is the most under-diagnosed and unrecognized disease in America.  
Recent studies have shown that Celiac Disease (CD) affects
1 in 133 Americans and the majority is still not
diagnosed.  

Celiac disease is a genetic disorder affecting children and adults. People with celiac disease are unable to eat
foods that contain gluten, which is found in wheat and other grains. In people with celiac disease, gluten sets off
an autoimmune reaction that causes the destruction of the villi in the small intestine. They produce antibodies to
attack the gluten, but the same antibodies also attack the intestine, causing damage and illness.

Untreated celiac disease can be life threatening!

Finding the cause of this disease is a priority of the Center For Celiac Research (CFCR). Alessio Fasano, MD, is
the Medical Director and a leading expert in the field.  It was Dr. Fasano’s study that concluded the prevalence in
Americans. In fact, The National Institute of Health (NIH) has recognized celiac disease for the first time as a
serious health problem in the United States and estimates almost three million Americans are affected.  This is
greater than any other disease (second to heart disease)!  

The average time to diagnosis is 11 years and a new celiac is born every 16 minutes.

Celiac Information...
This corner of the Pavilion was an information center.  I had lots of articles on
celiac disease, our diet, the successes of The Center for Celiac Research
(CFCR), current research, The Charlotte Celiac Connection, sponsor brochures
and flyers.  If you did not understand celiac when you came to the walk, you
surely did by the time you left :)
Another fun but educational part of
the walk were these big foam feet.  I
had a different celiac buzz word on
each foot.  See the number in the big
toe... this number corresponded to
additional information in a 6 page
handout each walker received when
they registered. This made it fun for
children and adults alike and helped
pass the time as everyone needed to
circle the pond 5 times!
