The following was shared by our member, Les Kidder:
I thought everyone might find this enjoyable to read. It's from my
diabetes/celiac board. The child who wrote this is like Elise - she's around 8 and
both a type 1 diabetic and celiac. She just got back from a diabetes camp and had
written the following for a shared moments time.
The cook at their camp is "Scott" (who has celiac himself ) and he really went
above and beyond to make extra special good food for the kids. When other kids
were having Rice Krispy treats, the gluten free ones had chocolate chips in them,
when others got ice cream, the celiac kids got theirs with a gf cookie too. When
she got a dessert of two gf cookies with melted marshmallow and choc chips in
between, her mom said her eyes lit up and she yelled "I love having Celiac!" and her
brother said he wished he had it too (he doesn't really, but it meant a lot to the
little girl).
Here's how her poem went:

Shots and bites you understand But we both live in Celiac Land Barley, Rye, Oats and Wheat These are things we cannot eat Eating them's a big mistake 'Cause we will get a tummy ache But there are lots of foods to try Like gluten free cookies, cakes and pie So if you get this, don't feel sad Celiac isn't all that bad Scott makes lots of food that's nice And even bread made out of rice So please don't feel sad for me 'Cause chocolate ice cream's gluten free
