Charlotte Celiac Connection - Event #16!

Summary

We all went down under and well…just didn’t want to come up!  It was a fantastic lunch and the
service was super.  We had a few little bumps in the road but quickly work them out.  Outback is
by far a place we can all make our regular home.  In fact, I think Rose & Bill said they are there
at least twice a week.  Outback even gave us our own private section.  They were patient with us
as we worked through the menu items…of course we had to throw out my tiny print menus - I’m
near sighted not far sighted J  Our servers worked really hard because we had a really large turn
out.  Bottom line, we all highly recommend Outback Steakhouse!

We had quite a few new members join us.  Lisa and her mom, Aida, came.  Lisa was diagnosed at age
19 but was not very rigid with her diet.  She is now taking it very serious and is starting to feel
better.  Martha had a change of plans and was able to come.  She is still learning to adjust to the
gluten-free lifestyle and is so appreciative to have support.  We all chatted a good bit about how
important it is to be with others who really understand what you go through.  Other people can
love us and try to understand celiac.  However, only a fellow celiac can reach that core of your
inner being and make it all seem o.k.  

We also welcomed Marianne, Jane and Cathy.  Cathy made and shared the “Melt-In-Your-Mouth
Chocolate Meringue Cookies”.  This was the recipe that the Charlotte Observer published a week
or so ago.  They are very rich and sort of like a chocolate mouse type cookie, not what you would
expect from the sound of the recipe.  I will be sending this out to the group shortly!  Thanks
again Cathy, they were incredible!!  
Jane is going to give us the link to Moompies (of course I need correction here).  Moompioes are
an energy bar that she thinks are absolutely the best on the market! However, they are very hard
to find and you have to buy a case if you buy them online.  Maybe we get Earth Fare or Harris
Teeter to start carrying some of these things?  Anyone have connections here???  

Marianne has only been diagnosed about 5 months and she has been doing well with the diet.  
However, she is still feeling run down.  In fact, a few said they felt tired all the time (some just
at diagnosis and some still do).  Does anyone have any ideas?  This is not an iron problem since
levels are normal now.   Carol is feeling exhausted but her iron levels are low.  The good thing is
that she’s not giving up and is continuing to get tested.  Chandra shared an interesting fact I had
not heard before.  Chandra was having celiac like symptoms yet she is very methodical in following
her gluten-free diet.  Chandra was also under very extreme stress (something I can relate to) and
her doctor told her that this could create celiac like symptoms.  Something to think about the
next time you get sick and don’t think you’ve had gluten!

It was sooo good to see Betty (and her husband Clarence).  It has been quite awhile since Betty
has been able to join us.  Betty has battled many health issues recently but she looked better
than ever!!  I only wish I could have sat a bit closer to get caught up…I’ll have to call you for a
real good chat soon!  

Our little Rebecca forgot our “Rebecca Says” column.  Shhhh, do you want to know why?  It’s
because she has found the love of her life, Tony!  All she can think about is Tony.  Mom, Carol,
says she needs to get the unlimited calling plan since Tony lives in Illinois, this is getting a little
expensive J   Do you remember your first love?  Also, thanks again Rebecca for sharing your ice
cream with me.  I think next time we’ll just both order the burger with a side of ice cream, that’s
a great idea!

We had several regular members come like Chandra, Charlotte, Jan, Karen, Nancy, Rose (& Bill),
and Ruth.  It’s just too hard to be in every conversation since it was such a large turnout and in a
restaurant, it’s hard to move around a lot.  I could tell from scanning the tables though that
there was never a lag in conversation.  Everyone was sharing tips, stores, I showed my Moto Q
and all my gluten-free menus, talked about the challenges of traveling & dining at other homes,
new research advances, etc.  A few were planning on going to Earth Fare afterwards.  Our
conversations are not solely dominated by celiac talk.  We also talked about our jobs, vacations,
new homes/sales, etc.  Although, interestingly, it seems these other conversations generate more
stress than the celiac talk.  This might be a good sign!  Anyway, the sure tell way I know the day
has been a success is that at the end everyone hates leaving.  Then when they do they are always
so thankful and appreciative for another great luncheon!! So, thank you all for coming and
supporting each other and thank you again Outback for getting us out and under and over celiac!  

By popular demand, next month will be at Bonefish Grill!  There will be no bones to pick!  I’ve
heard nothing but positive things from people who have dined at Bonefish.  Also, I stopped at
Bonefish on my way home and talked to the partner.  Jim is so accommodating and is looking
forward to us coming there.  Since quite a few people had events on the 19th, I’m moving up our
meeting next month to the 12th.  So mark your calendars now and come fishing with us J
