    Summary of Current Event:

Our first luncheon after our first walk for celiac disease was at one of our favorite
restaurants Bonefish Grill.  Important to note is that Jim Craig, Co-Partner, was the only
restaurant owner/manager who sponsored our walk.  Jim is very supportive of our efforts and
has gone out of his way to make us welcome every time!  Of course, I teased Jim about not
wearing our walk t-shirt but then I understand why he needs to wear the Bonefish shirt J.  Jim
had two long tables set up for our group and our servers, Jeremy and Dessera, did a superb job
    of managing our large group.

Welcome - we welcomed new members Christina (& boyfriend Chris) who is new to the gluten-free
lifestyle and new to Charlotte!  We also welcomed Walter and his wife Pat.  Walter is a pro
after being diagnosed with celiac for five years.  We also welcomed Jill who's 79 year old
mother was just diagnosed with celiac disease.  Jill's mom is still recouperating after a hospital
stay but Jill will try to get her to come to Outback in July.  Finally we welcomed Rhonda &
Barabara who joined us during our May walk. They just moved here from Wisconsin.  Welcome
    Everyone!!

It was a great group and, as usual, there was no lull in conversation.  Cathy Thompson came with
some empty packages of gluten-free products that she had tried and liked.  She passed the
packages around so everyone could see.  This was a great idea and I encourage everyone to do
this going forward.  It’s great to talk about products but it’s extra nice to see the packaging so
you recognize it when you go shopping.

Here’s something that Cathy raved about and gives an A+:

    Breaded Chicken Breast Tenders
    By: Bell & Evans
Available at: Earth Fare and, per Gerri, at the Home Economist in Davidson

Les added - these chicken tenders are wonderful!  Daughter Elise LOVES them!  I would
recommend that everyone make sure that they get the BLACK box of them because the
    others are NOT gluten free.

Julia & Jan talked about some mainstream products now having “gluten-free” right on the label
(e.g., Hellman’s mayonnaise).  This is great news and means the labeling of products is getting
    even better!

People magazine article caution!  I still think it was a great article and nice for us to get
coverage in any media forum.  We had lots of discussion on the one sentence (on page 144) that
says “A rare diet slip, like eating a few pretzels, may lead to minor misery but won’t cause
serious damage to the villi.”  This may be a little dangerous to start spreading this as an
occasional slip is o.k.  It’s one thing to get slight contamination from cross contamination or
having some wheat as filler in an ingredient wherein the amount of wheat proportionately is still
low.  However, to eat a few pretzels or pizza wherein the primary ingredient is wheat is another
thing.  I went back to check my notes from the Celiac Symposium last November in New York and
    here’s the real scoop.

    Determining Safe Amount of Grain
Carol Semrad, MD – University of Chicago, USA
    http://www.celiacdisease.net

    Study Conclusion:
< 10 mg of gliadin per day – most patients can tolerate with no damage
< 5 mg of gliadin per day – recommended for patients that are highly sensitive

To understand what the measurements, Dr. Semrad said 10 mg of gliadin equals about 20 mg of
gluten or less than 1/8 teaspoon of flour (so don’t get too excited)!

Pool Party!!!  Judy and Rhonda are in the early stages of planning a pool party for our celiac
children.  They hope to have the party sometime in late July; so, look for more information to
come out later this month.  Thank you Judy & Rhonda, this is great and wonderful that we can
something fun for the kids to look forward to.

2008 Walk – YES, we will have one!  It’s a little too early to start serious planning but we have
made the decision to move forward and have another walk.  Serious planning will start in the fall
so if you are interested in helping, please send me an email and if you know what you would be
interested in doing, let me know this as well.

www.glutenfreetshirts.com - Phylis and I will be meeting with Mike Lodico who owns and manages
this gluten-free t-shirt company next Saturday.  You may recall from our walk raffle that Mike
was very generous and donated many GF T-Shirts and Sweatshirts!

Next Month – mark your calendars!  We will be going to Outback Steakhouse on 51 on
    July 14th - 3pm.

Don’t forget to save the packages of items you love so you can share with everyone at our next
    luncheon.

    Have a great month!

    Warm Regards, Janet
