Summary
Today’s lunch at P.F. Changs was superb!  We had a really good turnout and the service was great.  P.
F. Changs is always so very accommodating and goes out of their way to make our lunch memorable.  
Even when I mess up the reservation count they minimize it and quickly adjust.  We all had a great
lunch and they even put out the gluten-free soy sauce on the tables ahead of time.  Of course, most
us then indulged in their gluten-free dessert – the flourless chocolate cake!  It really needs a
better name like chocolate heaven or heavenly fudge delight.  Anyway, P.F. Chang will always remain
at the top of our favorite places to dine and since I live so close, it is a regular place I do
carryout.  

Welcome to New Members
I want to welcome our newest members Jennifer, Frank & Carolyn and Judy & Gary.  They all have
been adapting to the gluten-free lifestyle over the past year or so.  They sat on the other end of
our very long table but we’re in great hands with our more experienced members Charlotte and
Chandra.  Adapting to the gluten-free life is not easy and that’s why it’s important to come and
share ideas.  I know Charlotte and Chandra gave them the full scoop on the best places to shop and
products to buy!

Celiac Hot Tips
As usual, we always have tons of information and tips to share.  I can’t capture it all but here are a
few tidbits:

  • Charlotte said that Annie’s makes a GF macaroni &cheese (dry in a box with cheese pkg).  It
    tastes just like the Kraft’s gluten macaroni & cheese.  Something a few of us made it through
    college on.  So, I have added this to my shopping list to go down memory lane one more time.
  • When visiting family or friends on extended trips, take some pre-printed gluten free labels (e.
    g., “Jan’s Gluten-Free Food”).  Then refrigerated or countertop items can be labeled and not
    risk contamination or consumption (leaving nothing to eat).
  • Jillian said Pamela’s Pancake and Waffle mix makes great crepes!  The recipe is on the
    package and you can fill with your favorite item (e.g., jam, sour cream, etc.) and top with a
    little powder sugar.  No calories here :)
  • Every holiday, Jan makes these gluten-free treats.  Line a cookie sheet with the small gluten-
    free pretzels and top with half of a Rollo. Then bake just long enough to melt the Rollos.

  • Cathy will send us the name of the manufacturer but there is a great line of precooked rice
    packages.  They come 2 servings to a package in six different flavors.  You just microwave a
    few minutes.  This makes a great lunch or meal to throw in your suitcase for emergencies.  
  • Jan uses the Pamela’s Baking mix to make shortbread but uses the recipe from the Bisquick
    Box.  If you have any questions, you may just find Jan at any Ben & Jerry’s :)
  • I recently had my first gluten-free beer on my 3-year celiac anniversary.  I tried the “New
    Grist” beer available at Earth Fare ($10 for six) and it was great!  It really tasted like beer
    unless I just plain forgot :)
  • Finally, our last tip is a great treat from Kate, our down under friend.  It is a really easy
    recipe to memorize and has no calories (I added 3 – of course, I can’t count).
    3 ingredients only:
    1 cup of peanut butter
    1 cup of sugar
    1 cup of chocolate chips
    Drop by teaspoons on parchment paper and bake for only about 10 minutes at 350*.  Watch
    carefully and remove promptly (don’t let them burn). Then place them on a cold plate to let
    them set.  Store in a tin with parchment paper (not in plastic wrap).

Rebecca Says…
Rebecca was unable to join us this month.  So, in her absence I will provide you with some advice
albeit not as profound as Rebecca would provide.  Although Celiac may push us back into the dark ages
(when it comes to food), ours is not to reason why.  Rather we are to bolt ahead and break through
the sound barriers of gluten-free resistance.  Enjoy all the things we can but do not overindulge or
we may have another barrier to break through.  We missed you Rebecca.

My Email
Well, I quietly sneaked out of the dial-up age and arrived into the 21st century with DSL
connection.  Yeah! It was worth the wait and there are no regrets!!! J   I just wish I had this
earlier.  Soooo, please delete my ckingsgate@msn.com email from your address book.  Please continue
to use this email address or my ckingsgate@yahoo.com because I can forward easily to the group
from either of these email addresses.  My DSL connection is through Bell South so following the
same naming convention it is: ckingsgate@bellsouth.net .  I will eventually look into the group
distribution functionality at Bell South but not anytime soon.  It is a busy time for me right now at
work and home.  

Closing Notes
Thank you to all those who came to share and care, it was a great afternoon!  I have affirmatively
arranged for our next monthly meeting to be at Bravo! (at North Lake Mall).  Details will follow in
the upcoming weeks or are available on my web-site.

Also, Jan said that Earth Fare has cooking lessons on the last Monday of every month.  Thus, on
Sept. 25th at 6:30 pm will be the next one and it is suppose to be on desserts!  I confirmed via their
web-site and baker, Larry Harmon is the chef ... no amateur.  So, one guess where you will find us all
:)
