
| Celiac Disease is the inability to digest the protein-gluten, which is prevalent in many popular grains such as wheat, rye, barley and oats along with a host of others. If a person with celiac, either intentionally or is undiagnosed, does not abstain from these grains, the small intestine is damaged which impedes the absorption of nutrients. Celiac is the most under diagnosed disease in America! The rate of diagnosis is approximately 1 in 10,000; however, recent studies indicate it is really 1 in 133. The standard symptoms of celiac disease include: abdomen pain, bloating, diarrhea, gas, nausea, vomiting and weight loss. However, there are a vast number of other symptoms that can manifest, which makes diagnosis even more difficult. To be at risk for celiac disease (CD) you must have the gene, consume gluten and experience a stress event that triggers activation of the gene! Stress can be anything such as childbirth, surgery, trauma, or even a viral infection. Individuals of European descent are at greater risk! The good news is celiac is the only disease with a cure! The intestine renews itself in three days; however, complete healing may vary from individual to individual. By simply abstaining from these grains, the intestines heal and, for the most part, celiacs go on to live very healthy normal lives. Unfortunately, a small percentage of us may never heal. The problem is the statistics noted above. Although, awareness of celiac has been increasing tenfold over the past several years, it is still significantly under diagnosed.
